  • Tasting Notes
    The 2018 Sparkling Brut has expressive aromas of golden apple, lemon drop and hints of orange blossom. On the palate, the wine’s crisp acidity balances beautifully with the mouth-filling, slow-forming bubbles. Creamy and tart Key lime pie flavors create a crisp and juicy finish for this lush and elegant Brut.
  • Wine Origin
    The 2018 growing season was a wet one. It was cool and allowed the fruit to develop slowly, which resulted in a somewhat later-than-average harvest. This extra time on the vine gave this cuvée extra complexity. 54% of the cuvée was from Sangiacomo Kiser B Chardonnay, harvested on September 7th, 2018 at 18.5º Brix and 46% was from Thale’s Vineyard Block F1 and F2 Pinot Noir harvested September 4th, 2018 at 20.3 Brix.
  • Production Notes
    Each block was picked on a different day and three press cuts were made from each. One at 130gal/ton, another at 20gal/ton and the heavy press at 30gal/ton. Keeping the press fractions separate allowed us to choose the ideal amount of tannin and acid for the final blend. Fermentation took place in tank at a cool 65º F to preserve fruit aromatics. When fermentation was complete the wine was barreled down and aged in 3-year-old French barrels to allow it to breath, while not imparting any toast aromas. In 2019, the blend was assembled at 54% Chardonnay and 46% Pinot Noir.

    In 2016, the MacRostie Winery tradition of making stunning Pinot Noirs and Chardonnays sparked the decision to use the varietals we know and love to make a sparkling wine. For our third sparkling vintage, Winemaker Heidi Bridenhagen chose to create a cuvée of Pinot Noir and Chardonnay. This alluring wine brings together Chardonnay from the famed Sangiacomo Vineyard (the first vineyard we ever worked with) and Pinot Noir from our own acclaimed Thale’s Estate Vineyard.
